    I have never been—and never will be—a morning person. No matter how early I go to bed, no matter how excited I am to get up the following day, when my alarm goes off, I will inevitably hit snooze until the last possible second. I’ve made peace with this fate.

    Instead of fighting against this, I’ve learned to work with what I’ve got. I’ve given up on the idea of going to the gym before I go to work, I plan out my outfit for the following day the night before, and I rely on a steady stream of easy breakfast recipes. I’m always looking for new breakfast things to try, which is why I was excited to see Amy Palanjian of Yummy Toddler Food’s recipe for Breakfast Pizza Rolls—it’s just the thing that will help us non-morning people get out of bed.

    Why Breakfast Pizza Rolls Make Mornings Easier

    Besides the fact that this recipe sounds really good—I mean, it’s “pizza” for breakfast—there are two things it solves. The first is that it requires minimal ingredients. Just four, in fact: scrambled eggs, breakfast sausage, shredded cheese, and pizza dough. So already, you don’t have to worry about grabbing a million things at the grocery store in advance. That being said, this recipe would also be easy to adapt based on your preferences. You could use homemade pizza dough or store-bought; you could add in any extra vegetables that may be lingering in your fridge, like cherry tomatoes; and you can always sub in crispy bacon for the sausage if that’s more your vibe.

    The second thing that makes this extra appealing is that it’s a great make-ahead option for busy mornings. The recipe makes 12 pizza rolls, which will last up to a week in the fridge in an airtight container, or up to six months in the freezer. You could make a big batch on a Sunday, and simply pop them in the microwave for a few minutes in the morning and you’d have something hearty, warm, and satisfying.

    How to Make 4-Ingredient Breakfast Pizza Rolls

    After making some scrambled eggs and cooking your sausage according to package directions, stretch your pizza dough into a large rectangle on some parchment paper. Sprinkle the dough with the eggs, sausage, and shredded cheese. With the help of the parchment paper, roll the dough into a tight log, then cut it into 12 equal pieces and place them in a greased muffin tin. Bake for about 25 minutes, until the cheese is bubbly, then let cool for a few minutes before serving.
