Chicken legs, smoked Spanish paprika, and the classic elements of sofrito are the inspiration behind this paprika chicken recipe, an easy one-pan dinner.

A Sheet Pan Dinner Inspired by Two Spanish Flavors

Iconic smoked Spanish paprika—paired with intensely sweet, savory sofrito inspired this Spanish paprika chicken sheet pan meal.

Spanish sofrito is a slow-cooked, concentrated base of sautéed vegetables that, at its most basic, combines onion, garlic, and tomato, but often includes peppers and paprika, making it richer and more complex than Italian soffritto or French mirepoix. Countless Spanish dishes, from paella to stewed Basque chicken, rely on sofrito for the intense, sweet and savory flavor it imparts.

To make this easy sheet pan paprika chicken, I take those same sofrito ingredients and combine them with chicken legs coated generously in the spice, then I let the oven do the work. Baked until the skin is crisp, the meat is tender, and the vegetables develop a gentle char, it’s easy to make, but captures the slow-cooked essence of celebrated Spanish flavors.

     Key Ingredients

    • Chicken leg quarters: These are whole legs with the thigh and drumstick attached. The skin turns golden and crisp while the meat remains juicy and tender. Feel free to use only bone-in, skin-on thighs or drumsticks, if you prefer, or a combination. The roasting time is the same.
    • Spanish smoked paprika gives this chicken recipe fruity, smoky depth. More on this ingredient below.
    • Fresh thyme adds a woodsy and floral flavor. If you don’t feel like picking the leaves and chopping, instead scatter a few sprigs on the baking sheet and pick them out after roasting.
    • Roma tomatoes, or plum tomatoes, are firm and have a lower moisture content, so they hold their shape well as they roast.
    • Red onions: Once lightly charred, red onions become tender, mild, and sweet.
    • Red bell peppers: Roasting red peppers concentrates their flavors, making them fruity and sweet.
    • Garlic: Roasting whole garlic cloves tames their bite, softening them until they’re sweet and spreadable.
    • Extra virgin olive oil adds richness, promotes browning, and prevents sticking. Hojiblanca’s peppery character is particularly good with paprika.
    • Sherry vinegar: A splash of this distinctive Spanish vinegar adds brightness, balancing the sweet roasted flavors of the paprika and vegetables.
    • Parsley: A sprinkling of chopped parsley adds freshness and a pop of green.

    Ingredient Spotlight: Spanish Smoked Paprika

The key to this chicken tray bake is high-quality Spanish smoked paprika. Spanish smoked paprika is made by slowly drying red peppers over wood smoke before grinding them into a fine powder. Smoking adds a pleasant bitterness and depth of flavor to the already aromatic and fruity peppers.

While Spanish cooking relies on paprika year-round, I crave the sweet-smoky flavor of smoked paprika even more when the heat of summer finally breaks to crisp fall days. I wonder if, somehow, my craving is subconsciously tied to the spice’s harvest. There’s not nearly as much fanfare for the new crop of paprika as there is for the year’s wine grape harvest or freshly pressed olive oil, but from October to February, La Vera and Murcia, the two most important regions for paprika, are dedicated to the harvest, drying, and milling of the season’s peppers.

When shopping for Spanish smoked paprika, look for pimentón de la Vera or check the label for ahumado (smoked). Regular paprika won’t provide the same smoky character. The most common Spanish paprika is dulce, which is sweet and mild. Spanish food is rarely spicy, except patatas bravas, but paprika can be agridulce (mildly spicy), or picante (spicy). So if you prefer a kick, you can try a spicier paprika.

How to Make Spanish Paprika Chicken

Step 4: bake and serve. How to make Spanish paprika chicken. Step 1: gather your ingredients. Step 2: season the chicken, Step 3: place the veggies and chicken on a sheet pan. Step 4: bake and serve.

Spanish paprika chicken takes about 15 minutes to prep. Then, everything is tossed together and roasted on a sheet pan, minimizing dishes and cleanup. An hour in the oven ensures the skin on the chicken legs is crisp and the meat stays tender while the vegetables soften and release their juices. Here’s how to do it:

    • Get ready. Arrange a rack in the top third of the oven and preheat to 375°F. Quarter 4 roma or plum tomatoes lengthwise, cut 2 red onions and 2 red bell peppers into 1/2-inch wedges, and peel 8 garlic cloves.
    • Season the chicken. Pat 4 bone-in, skin-on chicken leg quarters dry and season all over with 2 teaspoons smoked paprika, 1 teaspoon salt, some freshly ground black pepper, and 1 teaspoon thyme leaves. Place in a rimmed baking sheet and set aside while prepping the vegetables.
    • Add the vegetables. Add the tomatoes, onions, peppers, garlic cloves, 2 tablespoons extra virgin olive oil, 1 remaining teaspoon smoked paprika, 2 remaining teaspoons thyme leaves, and 1 tablespoon sherry vinegar around the chicken. Toss everything until evenly coated with oil and spices, then spread the vegetables into an even layer in the pan, arranging the chicken on top, skin-side up.
    • Roast. Bake for 1 hour, until the chicken is nicely browned, the vegetables are tender and charred at the edges, and plenty of flavorful juices have collected in the pan. Chicken legs are at their most tender at an internal temperature of 185 to 195°F. After an hour roasting, the vegetables should be tender, have released their juices, and just started to char at the edges. The chicken skin should be browned and crisp. If the chicken needs more color after an hour, broil for 1 to 3 minutes, watching closely.
    • Serve. Drizzle the remaining 1 tablespoon sherry vinegar over everything, then sprinkle with chopped parsley, and serve.

    Tips and Tricks

    • Make sure your paprika is fresh! Don’t use the one that’s in the back of the cupboard that’s been open for a year. Spices lose their oomph over time, and the key to the comforting flavors in this simple dish is fresh, good-quality smoked paprika from Spain.
    • Embrace the juices: Crowding the pan normally inhibits browning, but here that extra moisture works in your favor because you’re creating a juicy vegetable base while keeping the chicken exposed so its skin can crisp.
    • Broil at the end (if needed): After an hour roasting in the top third of the oven, the vegetables should be tender, have released their juices, and just started to char at the edges. The chicken skin should be browned and crisp. If the chicken needs more color after an hour, broil for 1 to 3 minutes, watching closely.

    Make It Your Own

    • Swap the herbs: Try a teaspoon of fresh rosemary or a tablespoon of fresh oregano. No fresh herbs on hand? Substitute a teaspoon of dried thyme or a teaspoon of dried oregano.
    • Try Romano peppers: If you can find long, sweet Romano peppers, they have thinner skins and a sweeter, more concentrated flavor than bell peppers.
    • Add potatoes: Cut two Yukon Gold potatoes into 1-inch wedges and add along with the other vegetables.
    • Add Spanish chorizo sausage: Cut 4 ounces of fresh Spanish chorizo sausage into 1-inch-thick slices and add along with the vegetables.

What to Serve with Spanish Paprika Chicken

For a no-fuss weeknight meal, serve this Spanish paprika chicken with a simple green salad and a loaf of crusty bread to mop up the juices.

For a larger spread, make a pot of fragrant saffron rice, roast some baby potatoes, or make a side of roasted garlic mashed potatoes (you can use the garlic roasted with the chicken). Don’t forget to spoon the pan juices over everything.
