Why This Is the Only Crispy Tofu Recipe You Need
- Golden and crispy every time: A light coating of cornstarch creates that irresistible crispy exterior without deep frying.
- Works with everything: We keep it simple with garlic powder and black pepper, which means this tofu works with pretty much any other flavor you pair it with.
- Three easy cooking methods: Pan-fry, bake, or air fry, it’s always going to turn out perfect.

Ingredients for Crispy Tofu
- Extra-firm or firm tofu: Extra-firm tofu is a bit chewier, while firm tofu is slightly softer, but both crisp up beautifully. No need to press the tofu here. Since we’re not marinating it, simply drain it and pat it dry with a clean towel if it seems especially wet. Want to learn more? Check out my guide on how to press tofu (and when you don’t need to).
- Soy sauce: Use tamari for a gluten-free option.
- Light oil: You can omit the oil for an oil-free option; the tofu won’t be as crispy, but it will get lightly crisp in the air fryer.
- Seasonings: Garlic powder adds savory flavor, while black pepper adds a gentle heat.
- Cornstarch: Creates the crispy coating. Potato starch is an excellent 1:1 substitute and actually gets even crispier.
Tips and Variations
- Gently toss to coat: If you stir too vigorously, the tofu will break apart. (This is especially true if you use firm instead of extra-firm tofu.)
- Don’t overcrowd the pan: Give the tofu space so it crisps instead of steaming.
- Flip only after a crust forms: If the tofu sticks to the pan, it probably isn’t ready yet. Once it’s nicely browned, it will release much more easily.
- Customize the seasoning: This recipe is simple by design, making it a great base. Feel free to add smoked paprika, onion powder, cayenne, curry powder, or your favorite seasoning blend.

Instructions
-
Prep the tofu: If your tofu is very wet, gently press it with a clean towel to remove excess moisture. Cut into bite-sized cubes.
-
Season: Add the tofu to a bowl and toss with the soy sauce, oil, garlic powder, and black pepper. Sprinkle the cornstarch over the tofu and toss until evenly coated.
-
Choose your cooking method:Pan-Fried: Heat 1-2 tablespoons neutral oil in a large non-stick pan over medium-high heat. Add tofu in a single layer (don’t overcrowd). Cook for 8-12 minutes, flipping occasionally, until golden and crispy on all sides.Baked: Preheat oven to 425°F (220°C). Spread tofu on a parchment-lined baking sheet. Bake for 20-25 minutes, flipping halfway through, until crispy.Air Fryer: Preheat air fryer to 400°F (200°C). Lightly grease the basket if needed. Add tofu in a single layer. Air fry for 10-15 minutes, shaking halfway through.
Notes
Gluten-free option: Use tamari instead of soy sauce.
Oil-free option: Omit the oil and bake or air fry. The tofu will still get lightly crispy.
Cornstarch substitute: Potato starch works as a great 1:1 substitute and can make the tofu even crispier. Arrowroot starch can also be used, but the coating may be slightly lighter and soften more quickly.
