Made with finely shredded kale, a zippy lemon Dijon dressing, chewy dried cranberries, crunchy almonds, and crispy chickpeas or croutons, this easy salad is anything but boring. Perfect as a healthy lunch, side dish, or meal-prep friendly salad that actually tastes delicious.

    If you’ve never been a kale salad person, this might be the recipe that changes your mind. The secret isn’t fancy ingredients, it’s how you prepare the kale. Finely shredding it and giving it a quick massage transforms it from tough and bitter into tender, flavorful greens that actually soak up dressing. Add sweet dried cranberries, crunchy toasted almonds, crispy chickpeas, and a bright lemon Dijon dressing, and suddenly kale salad becomes something you’ll actually crave.     For the Salad

    • Kale: Curly kale or lacinato kale both work in this recipe, but whatever you use, be sure to remove the tough stems.
    • Dried cranberries or golden raisins: These add a nice sweet contrast and chewy texture.
    • Toasted almonds or pepitas: For crunch.
    • Crispy roasted chickpeas or vegan croutons: I usually use crispy roasted chickpeas because they add a protein boost.
    • Vegan Parmesan (optional): This homemade vegan Parmesan is my favorite, but even just an extra sprinkle of nutritional yeast will do.

    For the Lemon Dijon Dressing

    • Olive oil: You’ll also need a little extra for massaging the kale.
    • Fresh lemon juice: The acidity and brightness help balance the flavor of the kale.
    • Dijon mustard: Adds depth and also helps emulsify the dressing.
    • Maple syrup or agave: To balance the lemon juice.
    • Garlic: You just need one small clove; if your cloves are big, you can use half of one.
    • Nutritional yeast: For a subtle cheesy, savory flavor.
    • Salt and black pepper: To taste.

    How to Make Kale Salad

    1. Massage the Kale: Add the shredded kale to a large bowl. Drizzle with a few teaspoons of olive oil and massage the leaves with your hands for 1 to 2 minutes until they’re darker, softer, and reduced in volume.

    1. Make the Dressing: In a small bowl or jar, whisk together the olive oil, lemon juice, Dijon mustard, maple syrup, garlic, nutritional yeast, salt, and pepper.

    1. Dress the Salad: Pour the dressing over the kale and toss until every leaf is evenly coated.

    1. Add the Toppings: Just before serving, sprinkle on the dried cranberries, toasted almonds, crispy roasted chickpeas (or croutons), and vegan parmesan.

    • Shred the kale finely: After removing the stems, stack the leaves, roll them up tightly, then slice into thin ribbons.
    • Keep the crunchy toppings separate for meal prep: If you’re making this kale salad ahead of time, store the chickpeas, croutons, and nuts separately and add them just before serving.
    • Make it oil-free: Use my go-to oil-free salad dressing and massage the kale leaves with lemon juice instead of olive oil.
    • Customize it: Try adding avocado, chopped apple, roasted sweet potato, quinoa, marinated tofu, tempeh bacon, shredded carrots, roasted beets, cucumber, sunflower seeds, pickled onions, or fresh herbs.
