    These healthy bean recipes turn one of the Mediterranean’s humblest pantry staples into balanced, satisfying meals. Most are vegetarian, several are vegan, and many are make-ahead friendly enough for packed lunches.

    My Go-To Easy, Healthy Bean Recipes for Dinner

    Growing up in Egypt, I learned early that beans are so much more than a side dish. People all over the Mediterranean have been stretching beans, lentils, and dried peas into flavorful, nourishing meals for centuries. Add a glug of good olive oil, a handful of fresh herbs, a few warm spices, or whatever vegetables you have, and you’re well on your way to dinner.

    Beans are also some of the hardest-working ingredients in my pantry: They’re inexpensive, and both dried and canned beans keep for a long time. Dried beans are typically less expensive and give you more control over their texture and seasoning, but they require extra time for soaking and cooking.

    Quick Tip: Dried vs. Canned Beans?

    I reach for dried beans when their texture really matters—and I particularly love these dried chickpeas for homemade hummus and falafel—but I love the convenience of canned beans for quick meals. Canned beans work beautifully in all of these recipes. Look for low-sodium or no-salt-added varieties if that’s important to you, and drain and rinse the beans unless the recipe asks you to reserve some of their liquid. Here’s a rough conversion guide if you’d prefer to simmer your own:

    • 1 (15-ounce) can of beans equals about 1 1/2 cups drained, cooked beans.
    • To replace 1 (15-ounce) can, start with a heaping 1/2 cup of dried beans, then soak and cook them.
    • 1 cup or 1/2 pound of dried beans makes about 3 cups of cooked beans.
    • 1 full pound of dried beans makes up to 6 cups of cooked beans.

    These amounts may vary slightly depending on the type of bean, so follow the individual recipe whenever it provides specific instructions.

    Beans know how to hold their own at the dinner table! These healthy bean recipes for dinner pair them with colorful vegetables, leafy greens, eggs, or lean ground turkey to make a satisfying meal.

    1. Butter Beans with Garlic, Lemon and Herbs

    This is the kind of dinner that makes you wonder why you ever thought lima beans were boring. Canned butter beans (AKA lima beans) simmer briefly in a warmly spiced broth before fresh lemon and three different herbs wake everything up. Best of all, it takes only 12 minutes. Serve with crusty bread or basmati rice to catch every drop of the lemony broth.

    2. Tuscan-Style Beans and Greens

    Somewhere between a soup and a stew, this rustic Tuscan dish combines creamy cannellini beans with tender lacinato kale. Onion, garlic, sage, and red pepper flakes flavor the light broth, and a little nutty cheese adds a savory finish. It’s also super fast; using canned beans means the whole meal is ready in 20 minutes. For a larger spread, serve it with Panzanella or blistered tomato bruschetta.

    3. Turkey and White Bean Skillet

    This one-skillet meal brings plenty of color and texture to the table! Lean ground turkey cooks with fennel, oregano, thyme, and sunny Aleppo pepper. Cannellini beans, spinach, roasted peppers, and juicy tomatoes join the flavor party, and a splash of red wine vinegar brightens everything up. Homemade croutons add crunch and soak up all the delicious juices.

    4. White Bean Shakshuka

    Shakshuka is always welcome at my table, whether it’s breakfast, lunch, or dinner! Cannellini beans make the spiced tomato and bell pepper sauce even more substantial, and the eggs gently poach right in the same pan. Finish with fresh parsley and dill, then bring the skillet straight to the table with pita or a baguette for dipping.

    5. Turkish Vegetable Casserole with Chickpeas

    A rainbow of beets, cauliflower, carrots, red onions, and bell peppers make this hearty casserole a true vegetable celebration, and adding chickpeas makes it a meal. Roasting the vegetables brings out their natural sweetness, while garlic and spices add layers of warmth. It needs about 90 minutes in the oven, but only 15 minutes hands-on. Serve as a vegetarian main or alongside grilled chicken thighs or za’atar salmon. 

    Healthy Bean Soups

    A pot of beans can become the coziest dinner with just a few vegetables and warm spices! These healthy bean soups are substantial enough to serve as the main event, particularly with bread and a simple salad on the side.

    6. Garlicky Chickpea Spinach Soup

    Coriander and cumin infuse this hearty soup with deep, smoky savoriness and mashing some of the chickpeas gives the broth a rich, velvety texture. I love how this soup begins with warm North African flavors and ends Italian style, with a drizzle of extra virgin olive oil (the good stuff) and a shower of grated Pecorino Romano cheese.

    7. Greek Black-Eyed Pea Soup

    Known as mavromatiká in Greece, this traditional black-eyed pea soup is both comforting and nourishing. Onion, fennel, garlic, and tomatoes form the flavorful base, while a generous amount of spinach wilts into the pot at the end. Use dried black-eyed peas and soak them overnight, or take the easier route with canned. Make it part of a Greek-inspired meal by adding a traditional Greek salad or spanakopita. 

    Fresh Bean Salads

    When I need a satisfying lunch without turning on the stove, canned beans come to the rescue! These fresh bean salads take only 15 minutes and bring plenty of crunch, herbs, and bold Mediterranean flavor.

    8. Mediterranean Three Bean Salad

    Kidney beans, cannellini beans, and chickpeas make this colorful salad substantial enough for lunch or a light dinner, especially paired with grilled chicken breast or grilled salmon. Crunchy vegetables, capers, and a trio of herbs add loads of freshness, while a garlicky lemon-Dijon vinaigrette ties it together. It takes only minutes to make, but give it another 30 to chill if you can—the beans will soak up even more flavor!

    9. Tuna White Bean Salad

    Need a protein-packed lunch? This no-mayo tuna salad is a pantry-friendly meal you can put together in 15 minutes. Creamy cannellini beans, juicy tomatoes, green olives, and red onion mingle with tuna in a punchy lemon-garlic dressing. I love it over baby spinach or arugula, or tucked into pita.
