Cinnamon scrolls have been popping up all over my feed lately—and I’ve been seriously craving one (or three)! So, we called on our resident dietitian Grace to whip up a simple, lunchbox-friendly version that busy parents can actually manage. These are warm, fluffy, and just the thing for a chilly afternoon pick-me-up. Who else is keen to give them a go?
Ingredients:
- 2/3 cup plain flour
- 1/3 cup wholemeal plain flour
- 1 ½ tsp baking powder
- Generous pinch of salt
- 50g butter (room temperature)
- 1/3 cup full cream milk
- 1 egg
- 1 tbsp maple syrup
Filling:
- 1 apple finely diced
- 100g butter (room temperature)
- ¼ cup brown sugar
- 1 tsp cinnamon
Frosting:
- ¼ cup cream cheese
- ¼ cup icing sugar
- hot water for consistency
Method:
- In a large bowl, combine both flours, salt and baking powder.
- Using clean hands add 50g butter and rub in using fingers until mixture forms a light crumb.
- Add in milk and use a wooden spoon to mix.
- Lightly dust a clean surface with flour and turn out mixture.
- Knead for approx. 3-5 minutes until it comes into a dough and roll out into a rectangle.
- Mix together 100g butter, brown sugar and cinnamon into a smooth consistency.
- Spread over rolled out dough and sprinkle over diced apple.
- Roll up from the long edge to make a log.
- Make even cuts into ~8 pieces and place faceup slightly apart on a lined baking tray.
- Lightly beat egg & maple syrup together and glaze over the scrolls.
- Cook in hot oven for 30 minutes at 180ºC.
- While scrolls cool, mix ingredients for frosting using hot water to get desired consistency and top cooled scrolls with icing before serving.
