This pea and cucumber salad recipe is super easy to prepare and has only four core ingredients.
You can adapt the simple salad to meet your tastes and dietary salad to create a dish that the whole family will enjoy.
The Four Simple Ingredients For The Easy Recipe

Here are the 4 basic ingredients that you’ll need to prepare the great recipe:
Peas – I used frozen garden peas, but you can use any variety of fresh or frozen peas that you’d like.
Cucumber – I’ve kept my cucumber unpeeled but you can feel free to peel your cucumbers if you’d prefer.
Apple Cider Vinegar – to balance the flavors of the salad with the nutritious homemade dressing ingredient.
Extra Virgin Olive Oil – to help bring all of the salad ingredients together into the perfect dish.
Extra Ingredient Ideas

You can feel free to simply stick to the above four ingredients, or add any of the following extra ingredients to your salad bowl:
- Feta Cheese or Parmesan Cheese
- Chopped chives
- Mint leaves or Mint sauce
- Lemon zest or lemon juice
- Chickpeas, Lentils, Cannellini beans or any other beans you’d like
- Salt, Pepper or any other seasoning you’d like, to taste
- Swap the vinegar for white wine vinegar
- Swap the olive oil for avocado oil

Pea and Cucumber Salad Recipe
- 3 Cups Fresh or Frozen Peas
- 1 Cucumber
- 2 Tablespoons Apple Cider Vinegar
- 2 Tablespoons Extra Virgin Olive Oil
- If using frozen peas, place the peas into a heatproof bowl or saucepan, then pour over water from a recently boiled kettle.
- Allow the peas to sit for 10 minutes to thaw.
- Once the peas have thawed, drain and rinse them, then move to a large salad bowl. (If using fresh peas, you can simply wash them and pop them into the salad bowl.)
- Wash and slice the cucumbers, removing the peel if preferred, and add to the peas in the salad bowl.
- Toss to combine, then drizzle over the apple cider vinegar and extra virgin olive oil and give the salad a final toss through until well combined.
- Enjoy straight away or place in the fridge for a few hours or overnight to all the flavors to develop, then enjoy within a couple of says, storing leftovers in an airtight container in the fridge.
